Kurukuri Tikki is a play on popular street food Kurkuri Aloo Tikki and Cholle from Delhi.
Chef Rupa is well known for her street food items. When coming up with the menu for Celebration by Rupa Vira, her team tried to figure out how to put a modern touch on a very traditional and popular dish. She added yogurt pearls, foamed yogurt, and other touch but it was still wasn’t adding a unique touch to the dish.
While cooking for a wedding catering where she was cooking Mediterranean food for Sangeet night she came up with the idea of how to add a modern touch to this classic dish. She took the Cholle (Chick Peas) and replaced it with Red Pepper Hummus to add a unique flavor to this popular dish.
The dish uses cold Red Pepper Hummus as the foundation bed of the dish. Hot Kurkuri (Crunch) Aloo (Potato) Tikki is added on top of the hummus. The dish is garnished with apricot marmalade, cherry tomatoes, beetroot sauce, yogurt, cilantro, and tamarind chutney. The dishes offer a perfect savory chaat with sweet, spicy, salty, and crunchy flavors.
